Lemon Chicken w/ Roasted Potatoes and Green Beans

There is something about food roasting in the oven.
The aroma fills the house and dinner can't seem to come soon enough.
That is the case with this dish!

Here Is What You'll Need:
-4 boneless, skinless chicken breasts
-6 tablespoons olive oil
-2 lemons
-4 cloves garlic, minced
-1 teaspoon salt
-1/2 teaspoon pepper
-3/4 lb trimmed green beans
-8 small potatoes.

Preheat oven to 450ยบ
Coat your baking dish with 1 tablespoon olive oil.

Trim your green beans.
Quarter your red potatoes
Take 1 lemon and thinly slice it.
Take the 2nd lemon and juice it.
Lay your lemon slices on the bottom of your dish.
In a separate bowl mix remaining oil, lemon juice, garlic, salt and pepper.
Toss green beans in mixture and the remove with a slotted spoon.
Lay on top of the lemons.
Now toss your potatoes in the oil mix and then remove with slotted spoon.
Place around the edges of the dish.
Finally place your chicken breast in center of dish and pour remaining oil mix over top.
Roast for 50 minutes.
Remove, dish it out, and enjoy.
There is just the right amount of lemon and pepper and salt to make the whole dish perfect for any dinner!

    as we have to take advantage
    of the months we can do that
