I just found out from a mother friend who has kids in school that summer is down to it's final 3 weeks.
I can't believe that it's almost over!
Not that it really means anything for me.
Needless to say when I think of things that remind me of summer, lemonade is right up there with flip flops and sunshine!
So what better way to combine my love of summer with my cookie desires than to whip up some yummy lemonade sugar cookies!
Here Is What You'll Need:
-1 cup butter softened
-1 cup granulated sugar
-3 eggs
-3 cups all purpose flour
-1 teaspoon baking soda
-2/3 cup thawed frozen lemonade concentrate.
Mix the butter and sugar.
Add each egg individually and mix until thoroughly blended.
Combine flour and baking soda.
Add 1/2 of the dry mix to the butter blend.
Add 1/3 of the lemonade to the butter blend.
Continue alternating the flour and lemonade until all added.
Mix WELL!
Refrigerate for about an hour.
This will help!
The mix is super sticky and only gets stickier the warmer it gets...so keep it cool.
Place 1" sized balls equally spaced (leave room because they spread while baking) on a baking sheet.
Bake at 400ยบ for 8-10 minutes until they are just golden on the edges.
Allow them to cool thoroughly and then enjoy!
These cookies are soft and sweet and just the right amount of lemony!
I just whipped these up for a pool party at our neighbors and they were a big hit!
