Summer Tomato, Corn, Avocado, & Crab Salad

I know I showed this recipe to you around Father's Day.
I'm sorry it's taken me so long to share it with you.
I hope you aren't upset!
It is worth the wait I promise!!!

Here is What You'll Need:
-12 oz of lump crab meat (we used imitation crab $2.50/12 oz and it tasted great)
-1 teaspoon olive oil
-2 teaspoons chopped cilantro
-salt and pepper to taste
-1 pint grape tomatoes, cut in half
-2 jalapenos, seeded and diced
-1-1/2 cups of roasted corn kernels
I literally took frozen corn, placed it on an aluminum foil lined cookie sheet and broiled until it was roasted.
-1/3 cup chopped red onion
-1 avocado, diced
-2 limes juiced
Look at all those colors!
In a small bowl mix the onion, lime, oil, salt, and pepper and let them sit a few minutes.
In a large bowl mix the crab, avocado, tomatoes, pepper, and corn.
Finally mix everything together and serve over a bed of romaine lettuce.
This dish is scrumptious!!!

*It is about 6 servings and approximately 130 calories (not including the romaine)**
