Lime Cilantro Slow Cooker Chicken

I think that sometimes when we think of crock pots we think of cold weather.
I know that as the weather get's warmer hotter the idea of a hot dinner can be a little off-putting to some.
This recipe, however, is so bright and colorful that I can't wait to make it no matter what the season!

Here Is What You'll Need:
-24oz jar of salsa, I chose Peach Pineapple Chipotle because I love the fun flavors it adds to the meal.
-Juice from 1 lime
-1/4 cup fresh cilantro, chopped
-1 package of taco seasoning mix
-6 boneless skinless chicken breast halves.

Don't forget to spray your crock pot with a non-stick spray to make clean-up easier!
First steps first juice the lime
Chop the Cilantro.
Pour your salsa, lime juice, cilantro, and taco seasoning into the crock pot.
Mix well.
Add your chicken and mix further.

Cook on low for 6 hours.
When you are done you can do one of 2 things.
1. Serve this over chicken with salsa mixture over a bed of rice...
2.(what we did)...take your chicken, throw it in the Kitchenaid and shred, the serve on tortillas.

Either way I forgot to get a picture of the final product, but I assure you it was delicious.
Not to mention you can't go wrong with only 5 ingredients!

**This dish serves about 12 taco's or 6 people.  Each serving is approximately 165 calories.  In case you are wondering why I recently started putting the calories down it's because Bud has made a lifestyle change.  He is using the MyFitnessPal app on his iPhone to track calories.  Thus I have to enter all my recipe ingredients into a calorie calculator to give him a number...this benefits everyone!**

  2. Yum anything with cilantro is right up my alley. Crock pot good for the hot summer so hot kitchen duty.
