Sometimes as a Mom, the days seem to be monotonous.
Oh, I mean that in the best way possible.
I love being home with my daughter, but there are days when I need something special.
Something just for me.
So when that happens a treat is in order.
This time it was Crepes & Creme!
Here Is What You'll Need
For the Crepes:
- 1 cup flour
-1/3 cup sugar
-1 teaspoon vanilla
-1 cup milk
-1/4 cup water
-4 eggs
-1/2 cup butter melted.
Here Is What You'll Need
For the Creme:
-1 package of cream cheese or Neufchatel cheese (it's lower in fat)
-1 cup powdered sugar
-1 cup sour cream
Take all the ingredients for the crepes, minus the flour.
Place it in the blender and mix until well blended.
Then slowly add in the flour until well mixed.
Place in the fridge for about an hour.
This is great to make the night before, in the morning all you have to do is pull it from the fridge and get to work cooking!
Place about 1/2 teaspoon of butter in your pan...
Then pour just enough batter to cover the bottom...actually a little less.
Then you'll rotate your pan until the batter covers the bottom.
Cook for about 30 seconds or until you can easily slide a spatula underneath.
Once you get going on that put your ingredients for the cream in a bowl and get to mixing!
Cook your crepe on the opposite side for about 15-20 seconds or until golden brown.
Layer your crepes between pieces of wax paper.
When you are ready to eat spread a layer of creme on each crepe.
You can even go so far as to add your favorite berry or fruit.
I had frozen raspberries in the house so I placed a row of those in the creme.
Then roll it up!
Sit down, take a bite and enjoy.
