Are you in a chicken rut?
I felt like we were.
That was why I opted to try this recipe.
Spice it up a bit!
Here is What You'll Need:
-4 Chicken Breast (boneless, skinless)
-4 teaspoons salt
-4 teaspoons pepper
-4 teaspoons garlic powder
-2 eggs, beaten
-1 cup all-purpose flour
-6 teaspoons peanut oil
-4 teaspoons salt

You'll need to flatten your chicken breast.
To avoid splatter and other such mess I suggest placing it in a ziplock bag.
Then pound away!
You'll want to get it to 1/2" to 1" thick.
Combine the Salt, Pepper, Garlic Powder.
Rub your chicken breasts with seasoning mix.
Now it's time to set up your assembly line:
You'll need one dish with flour, another with the beaten egg, and a final with the Panko.
First, dip both sides in flour.
Second, dip both sides in egg.
Third, dip both sides in Panko.
Heat your peanut oil in a pan and then cook the chicken for 5-10 minutes on each side, until crispy, golden and cooked through.
I served ours up with a side of pasta salad!
It was a huge hit and I can't wait to make it again.

ReplyDeleteYou do the same thing, instead of Panko, you put crushed saltine crackers and seasoning salt into a ziploc bag. Drudge the chicken in flour, egg and then shake it in the cracker bag. Cook for 40-45 minutes at 400. YUM!
