Blackouts

Rolling Blackouts.
That's what we dealt with yesterday.
It's not why I didn't post.
I had power all day.
I didn't post because it took me forever to get anything done last night!
I came home and fit in my workout.
Then I started dinner (recipe below), which should have only taken 30 minutes, but my slow self dragged on for an hour!
After we ate, I took my shower and decided to curl up in my rocker by the fire with my book (still trying to read 3 books by February 13th...it's not looking so good haha).
5 minutes in I was doing head-bobs.
I fought hard, but I quickly gave up!
I stumbled over to the couch, sat by my hubby (who was diligently working on emails), pulled a blanket over me and passed out....at 9pm!
That's EARLY for this girl.
At 10 I roused long enough to tell my husband we should go to bed.
At 10:30 I woke up grumpy and stormed off to bed (don't ask...I probably looked like an overgrown 3 yr old)!
At least I got a good nights rest!
Now for the recipe!

This recipe is a low-fat meal for 2-3 people adjust accordingly.

Ingredients:
1-1/2 cups uncooked Whole Wheat Rotini Pasta
2 crowns Broccoli, chopped
3/4 lb Chicken Cubed
1/2 cup Fat Free Reduced Sodium Chicken Broth
1 teaspoon Minced Garlic
2 oz Reduced Fat Cream Cheese
1 cup 2% Mozzarella Cheese
2 tablespoons Parmesan Cheese
1 Cup Bread Crumbs
Preheat oven to 375 degrees.
Cook pasta as directed
adding broccoli for the last 3 minutes
Cook chicken pieces 3 minutes
add broth & garlic.
 Simmer until chicken is done.
Stir in cream cheese & 1/2 cup of mozzarella to melt
Add drained pasta/broccoli to chicken mixture, toss to coat
pour into baking dish.
Cover and bake 15 min.
Top w/ remaining cheese and bread crumbs.
Bake uncovered 5 minutes.
Yummy!
As for the Parmesan Bread to be served on the side
Ingredients: 
1/2 loaf of French bread
Reduced Fat parmesan
Fat Free Butter Spray
Garlic Salt

On a baking sheet, slice French bread in half, lengthwise.
Spray each inside half.
Sprinkle with garlic salt and top w/ parmesan.
Bake at 400 degrees for 10 minutes or until crispy.

Serve with Red Grapes on the side and enjoy

I'm off to wait until 10pm when I can call my work's inclement weather line and see if maybe, just maybe we will get at the least a late start tomorrow.
There is a 60% chance of snow in Austin tonight.
I am really hoping for a three day weekend!
