Best Muffins!

I have a lot of favorite recipes, but this is one that I come back to more than any other.
It is perfect for helping with a sweet tooth.
It's a quick breakfast on the go or afternoon snack.
And quite frankly who doesn't like chocolate chips & peanut butter?

Here is what you'll need:
1. 2/3 cup peanut butter
2. 2 Tablespoons butter (melted)
3. 3/4 cup sugar
4. 2 large eggs
5. 1-1/2 teaspoons vanilla extract
6. 1-1/2 cups flour
7. 1-1/2 teaspoons baking powder
8. 1/2 teaspoon baking soda
9. 1/2 cup milk
10. 6 oz or approx 3/4 cup chocolate chips 
Preheat oven to 350
 Combine peanut butter and melted butter until well blended
 Mix in sugar, eggs, and vanilla
 Add flour, baking powder, and baking soda
mix well
 pour in 1/2 cup of milk
 followed by your 6 (+/- a few extra) chocolate chips ;)
 Stir until just combined.
 Spray your muffin pan well!
Nothing stinks more than having muffins stuck to the pan.
 Use an ice-cream scoop to measure your dough into each opening.
If you didn't know, this kind of ice-cream scoop measures the perfect amount each time!
(No I'm not a lefty, but I have to use my left hand to hold things because I can take pictures else)
 See!
Look how perfect each opening is!!!
Now cook these for 20-25 minutes.
I check promptly after 20, because my oven runs a little hot!
Insert a toothpick to the center and make sure it comes out clean.
 PERFECT!
 Wait a minute or two before removing them from the pan.
And let them finish cooling on a wire rack.
And there you have it...my favorite muffins...

  1. These are DEFINITELY a favorite recipe that you shared! I remember being at your house and I ate like 5 in one night!! They are SO yummy!!!!! I think I am going to have to make me some this weekend too! Love ya!
