BBQ Chicken Sandwiches

The official 1st day of summer is a little over 2 weeks away, but it's already nice and toasty outside here, so I'm going to go ahead and claim that summer has arrived.
And with summer comes so many things...
Lazy days.
Lemonade.
Pools/beaches.
Bare-feet and flip flops.
Long days.
Fireflies.
Oh....and of course....anything with the word grilled or BBQ!
Today I'm going to share a SUPER DUPER easy recipe.

Here Is What You'll Need:
- 4 Chicken Breast (cooked...I boiled mine-it makes for easier shredding)
 -1/4 cup shredded or chopped carrots
-1/4 cup BBQ sauce (you can add more later if it isn't enough for your liking)
-Buns
-Lettuce.
 Place your cooked chicken breasts in the mixer and start it on a low setting to get the chicken shredded.
Slowly add the carrots and BBQ sauce.
Allow to mix for 1-2 minutes.
 It will look like this when done.
 Spread a little ranch dressing on your bun, if you so choose.
Place your lettuce on the bun and a nice scoop of your BBQ chicken mix and TA-DA!
Easy Peasy Dinner is served!
Or lunch.

I wasn't sure what the hubby would think at first...I mean adding carrots and all seemed different, but he LOVED it.
And honestly you can't really taste the carrots with the BBQ sauce so I guess if you have a hard time getting your kids to eat veggie...he is a tricky way to sneak them in!
