Okay, well don't say I didn't warn you.
Here Is What You'll Need:
-2 sticks of softened butter
-1-1/4 cup sugar
-2 teaspoons vanilla
-1 teaspoon almod extract
-1 egg
-2-1/2 cups flour
-1/4 cup cornstarch
-3/4 teaspoon baking soda
-1/2 teaspoon salt
-1/2 cup rainbow sprinkles (the long thin ones)
-2 tablespoons rainbow perils (small ball ones)

These make me smile even bigger!
First things first preheat your oven to 375ยบ
Cream your butter and sugar for about 2 minutes until it's fluffy.
Then add vanilla & almond extracts, and the egg.
Mix until well combined.
In a separate bowl whisk together your flour, cornstarch, baking soda, and salt.
Slowly mix pour into butter mixture and continue blending on a low setting until all ingredients are well combined.
Lastly, add in the sprinkles...don't overmix or else the sprinkles will bleed into the dough.
Here is where it's up to you.
You can either use an ice-cream scoop for GIANT cookies....
...or a cookie scoop (that makes 1" dough balls)
I did the cookie scoop, I liked the idea of smaller cookies.
Put these in the oven for 15 minutes.
***Only bake until the edges are slightly brown.
If they turn golden your cookies will be crispier vs softer.
So check at 10 min and again at 12 and remove when they reach the slightly brown level.
Cool on a wire rack.
Now eat one.
Okay since you are in the kitchen you might as well have another!
I found myself making more trips to the kitchen than necessary in an average day, JUST so I had an excuse to grab a little taste of heaven.
I compare these to those shortbread sandies cookies.
They are heavenly.
Funny Story.
I made these on a Sunday night.
By Monday night they were 1/2 gone (not all by me...the hubby helped, but I was mostly guilty).
Tuesday morning I hear Bud say, "I'm doing this for your own good".
Puzzled as to what he was talking about at 7 in the morning, I spun around from the sink to ask, "You're doing WHAT for my own good".
There in his hand was a ziplock bag full of cookies.
"Where are you going with those," I questioned.
"I'm bringing these to work, I left you 5," was his response.
"5! You left me only 5!"
He said he was afraid if he left them all that I would eat them all.
I informed him that if I really wanted to I could just whip up another batch while he was at work, eat the whole batch, clean up the mess and he wouldn't know the difference.
He noted that this was true, but called my bluff.
He was right.
I wouldn't make an entire batch and eat them all in one day.
Anyways, I did promise that I would make another batch...for him to bring to work and I did so not only did they get the 10-15 before, but they just got another 22 in the office.
22, because I save 6 to give to our neighbor and I saved about 10 for us...okay I gave US 4, and stashed 6 others...they were SOOO good.
So if you need to win over the hearts of anyone...
the cookies are just what you need!

P.S. Let me just tell you that I am a fluke of nature. I have the fastest metabolism of anyone I know. I am thankful for it. I DO try to get out for walks daily, but that is the extent of my workouts right now. I am a fluke of nature...do not wish to have my body, because it is not natural! I realize that I'm not done having babies...so maybe when I'm done I won't be as blessed to eat whatever I want. Also, I haven't hit the big 3-0. I hear your metabolism changes then. So for the next few years I will take full advantage of this amazing metabolism and live up to my nickname "Cookie Monster"...and then I'll play it by ear. I foresee there will be more workouts, healthier lunches and dinners, but I'm hoping that will be enough that I don't have to give up cookies! Be Busy, Be Blessed!

DeleteI have made these so much lately for get togethers and per neighbors request that I know they are a hit.
Melt in your mouth yummy....ugh! I seriously can't think of a reason why I shouldn't whip up another batch and just hide them from my hubby?! ha ha ha
