Good Morning Everyone!
Is there still turkey in your fridge or have you eaten all your left overs?
Did any of you brave the world this past weekend to get a head start on your holiday shopping?
We didn't.
We stayed home.
Tackled a few projects and decorated for Christmas.
It was a stay in your sweats kinda weekend.
On top of that we opted not to cook this weekend, but to 'survive' off our leftovers!
This was easy since our neighbors sent us home with buckets of thanksgiving treats.
We also had leftover baked potato soup which is a perfect filler when the weather turns cool.
So gather your supplies and let's get started!
Here Is What You'll Need:
- 5 lb bag of russet potatoes, washed, peeled, and cut into cubes.
- 1 medium onion, diced
- 5 teaspoons minced garlic
- 64 oz chicken broth
- 16 oz cream cheese, room temp
- 1 Tbsp seasoning salt
- bacon bits, shredded cheese, and anything else you like on a baked potato!
This is a crock pot recipe so first things first, spray that non-stick spray on your pot!
Let's start by peeling those potatoes.
I found this part to be rather relaxing.
Is that crazy?!
Cut your peeled potatoes into cubes.
Place these in your crock pot.
Dice your onion.
Mix in with your potatoes.
Sprinkle your seasoning salt over the potatoes and onions.
Mix your garlic in with your potatoes and onions.
Now pour your chicken broth over everything.
Cook on high for 6 hours or low for 10.
This part can be a little tricky if you don't have a handy hand blender like this.
Ultimately, what you see above is me blending portions of the soup to mix up the textures.
If you have a masher you can try that, or you can scoop out 1/4 to 1/2 of your mix and blend it in the blender.
Then carefully return to pot.
About 30 minutes before serving I like to add in the cream cheese.
Stir, stir, stir until that cheese is well combined and your soup turns that creamy color.
Now you can add in your extras.
We like bacon bits and cheese and we are quick to stir it in so that the cheese melts!
It's thick and warm and yummy and well it's the perfect comfort food.
