It's hard to believe it's already been about 5 weeks since Bitsy turned 1!!
But here we are early November and I have a toddler.
Back when I was planning her birthday party I had a lot of things to take into consideration.
Snacks for the guests.
Food for the guests.
Decorations.
Oh and a cake for my daughter!
I knew I was going to use my favorite Butter Pecan cake mix for cupcakes for our guests, but after a year of knowing exactly what was going into Bitsy's tummy I couldn't bring myself to feed her boxed cake.
Instead I did a little searching and found a 'healthier' cake option.
Maybe it's not much healthier, but at least I know what's in it.
So, whether you are looking for babies first cake recipe, or just a yummy fall treat this recipe will yield wonderful results!
Here Is What You'll Need:
- 2 cups peeled and chopped apples
- 2 cups + 3 Tablespoons sugar
-1 teaspoon cinnamon
-1 cup cooking oil (vegetable, canola, peanut, your choice)
-4 eggs
-1/4 cup orange juice
-2 teaspoons vanilla
-3 cups flour
-1 tablespoon backing powder
-1/2 teaspoon salt
Preheat your oven to 325ยบ

Then chop into small pieces.
Measure out your 2 cups worth.
In a separate bowl mix in 3 Tablespoons of sugar and 1 teaspoon of cinnamon to your apples.
Set aside.

In a large bowl mix your sugar and cooking oil....
...add eggs, orange juice, and vanilla.
Mix well.

Slowly add your flour, baking powder, and salt.
Mix until you have a smooth consistency.

Add your apple pieces last and carefully fold in to batter.
Now the next step is up to you.
Add cupcake liners to a cupcake pan OR spray with non-stick spray OR apply crisco (or other brand shortening) to pan and the sprinkle with flour.
If you aren't using cupcake liners shortening and flour always give me the cleanest and easiest to remove results.
A regular round cake pan should cook about 60 minutes, but I still checked mine every 15 to ensure I didn't over or under cook it.
Now the next step is up to you.

My cupcakes took about 45 minutes to fully cook.
I think because of the apples in there it takes a while longer for everything to bake up right.

Once you are satisfied with their 'done-ness' remove and allow to cool.
These are a delicious breakfast muffin and anytime snack muffin.
In our case we used one as a cupcake for Bitsy's birthday party and frosted it with a home-made cream cheese frosting.
So there you have it.
A cupcake you can be proud to serve your little ones or yourself!
I think it's time to whip up another batch for the heck of it!
