AH-MAZING Avocado Chicken Enchiladas

Do you have a recipe in your kitchen that EVERYONE loves and it's easy and delicious?
I finally do.
This is my go to recipe!
When we have company....Avocado Chicken Enchiladas.
A friend has a baby, let's bring them Avocado Chicken Enchiladas.
Celebration dinner....you guessed it....Avocado Enchiladas!

Here Is What You'll Need for the Sauce:
- 1 Tablespoon Butter
- 1 teaspoon minced garlic
-1 Tablespoon flour
- 1 cup chicken broth
- 1 teaspoon cumin
-1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 2 Tablespoons chopped cilantro (don't forget to rub it together in your hands to wake up the dried spices)
-1 cup medium salsa verde
- 1/2 cup sour cream

Before you start anything preheat your oven to 375ยบ
In a sauce pan melt butter over medium heat.
Sautee garlic for 1 minute.
Stir in flour, constantly stirring for 2 minutes
Whisk in the chicken broth, cumin, salt and pepper, and bring to a low boil.
Once boiling, whisk in the sour cream, salsa verde, and cilantro.
Remove from heat.

Spray a 9x13" dish and then pour 3/4 cup of the sauce on the bottom of the pan.
Set the remaining sauce aside.

Here is What You'll Need for the Filling:
- 3 cups shredded cooked chicken breasts
- 2 cups of shredded cheese (we like colby & monterey jack, but pick what you like)
- 1 small onion chopped
- 8 to 10 flour tortillas
- 3 avocados, peeled and chopped
Have you ever bought avocados?
My suggestion to you, if you aren't making this for dinner tonight, choose the ones that are still pretty firm.  Let them finish ripening at home.  After 2-3 days at home mine are PERFECT.

Mix your chicken, 1/2 of the shredded cheese, onion and avocado and place about 1/2 cup on each tortilla
Roll each tortilla up and place in the baking dish, seam side down.
Pour remaining sauce over top.
Finish by topping it with the remaining 1/2 of your cheese.
Bake for 15-20 minutes.
Serve immediately and devour with intent!
These really are amazing!
And that's a lot being said for someone who moved to North Carolina from the Tex-Mex state!
Eating this makes me think, ever so briefly, that we are still sitting in Austin.

  2. My go to recipe is my BBQ Meatballs. Easy to make and everyone loves them (except my b-i-l who thinks they're too sweet, he's the only one though!). I can't wait to try this one, I'm on an avocado kick at the moment!
