Blueberry Lemon Breakfast Cake

I recently had a spouses brunch to attend and I had to come up with something to bring.
For some reason, if it's not a dessert, I struggle with deciding what to whip up for functions.
It may be that I am a perfectionist, yes it's probably that, but I want to bring something wonderful.
EVERY.TIME.
This was no different and after scouring Pinterest I found this recipe!

Here Is What You'll Need:
- 1/2 cup butter, room temp
- lemon zest from large lemon
- 7/8 cup and 1 Tablespoon sugar
- 1 egg, room temp
- 1 teaspoon vanilla
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 cups fresh or frozen blueberries
- 1/c cup buttermilk

Preheat your oven to 350ยบ
Cream butter, lemon zest and all but 1 Tablespoon of sugar.
Toss your blueberries with 1/4 cup flour.
Add egg and vanilla to butter/sugar/zest combo and mix until well combined.
 Whisk together with remaining flour, salt, and baking powder.

Quick Tip!
This recipe only calls for 1/2 cup buttermilk.
So if you are like me that means you have an entire carton of buttermilk that you have no need for.
What a waste right?
Well waste no more!
Pour that buttermilk into an ice cube tray and freeze.
Keep frozen until the next time you need it!
I froze mine in the tray and then transferred them to a freezer ziplock baggie.
I am so happy I didn't have to waste!

Now back to our recipe!
Add flour mixture to batter a little at a time.
Then add a little buttermilk.
Continue alternating slowly until they are both well comined.
Carefully fold in your blueberries.
Grease your 9" or similar size baking dish and spread batter into dish.
Sprinkle the top with remaining sugar.
Bake 30-35 minutes or until golden on the edges.
I like to toothpick test all my baked goodies, so I advise you do the same.
And there you have it!
A super moist, very yummy blueberry lemon breakfast cake.
I had leftovers after the brunch allowing Bud a chance to taste it.
Ultimately, it meant he devoured all that was left, he loved it!

  1. I have a hard time with what to bring if it's not dessert as well. I'm known for my bbq meatballs, that's considered a side, right??? :-)
