This recipe is a low-fat meal for 2-3 people, adjust accordingly.
Almond Rice Chicken, Lemon Asparagus, & Corn
Ingredients:
1/2 cup finely minced onion
Fat free cooking spray
1 Tablespoon parsley
1 cup instant rice (brown or white)
15 oz can Fat Free Reduced Sodium Chicken Broth
1 lb boneless chicken breast tenderloins
2 oz slivered almonds
Juice of 1/2 a lime
(Tonights dinner only called for asparagus, but seeing as how the hubby dislikes asparagus I whipped out some corn just for him).
Preheat oven to 350.
Saute onion using fat free cooking spray.
Stir in: parsley, rice, and broth.
Bring to boil
Cover and simmer for 20 minutes
Meanwhile, in another skillet...
saute chicken for 3 minutes on each side
OR
until done.
Once rice has completed combine almonds and chicken and drizzle with lime juice.
Now for the asparagus!
Trim stalk ends.
Season with fat free spray and lemon pepper
Bake for 15 min or until desired tenderness.
Feel free to cook the corn as you desire.
I just put some butter in a dish with my corn and heated it up (easy peasy).
Now that everything is cooked and baked up!
Looks like it's time to eat!
This meal took all of about 25 minutes to prep and cook.
