Monterey Chicken

Here is one of my favorite new recipes!
Seriously it's delicious!

Here is What You'll Need:
-4 boneless skinless (not frozen) chicken breast
-1/4 cup BBQ sauce (We LOVE Sweet Baby Ray's in this house)
-1/4 cup bacon bits
-1 cup of Colby Jack Cheese (shredded)
-1 can of Rotel
-Sliced Green Onions
Pepper

Pre-heat your oven to 400ยบ
Pound your chicken until it is nice and flat.
Using either a regular grill or Foreman grill cook chicken until it is no longer pink.

On a foil lined cookie sheet place your chicken breasts.
Spread BBQ on each breast.
Sprinkle evenly with cheese.
Place some green onions on top.
And a little Rotel.
Finish off with the bacon bits and pepper if you so choose.

Now place in the oven for 5-10 minutes until the cheese is melted.

Serve with a side of green beans or a vegetable of your choice!

This is such a tasty and QUICK dinner (especially if you use a Foreman grill).
There is hardly an excuse NOT to make it.
